​Winemaking at REVO is a balance of biological science and sensory art. Here is how we ensure every liter meets our rigorous standards:

Viticulture & Harvest: We monitor “Brix” (sugar levels) and acidity daily as harvest
approaches. Our grapes are hand-picked at the “Golden Hour” to ensure the fruit is cool, preserving delicate aromatics.

Crushing & Must Preparation: The grapes are de-stemmed and gently crushed. For whites, we separate the juice immediately; for reds, we keep the skins to extract color and tannins.

Controlled Fermentation: We use specific yeast strains optimized for the Indian climate. Our stainless steel tanks are temperature-controlled (15\text{°C} to 18\text{°C} for whites, 24\text{°C} to 28\text{°C} for reds) to manage the rate of fermentation.

Clarification & Stabilisation: We use cold stabilization and multi-stage filtration to ensure the wine is crystal clear and biologically stable for the Indian shelf.
